Ingredients
8 small to medium red potatoes
vegetable oil, for frying
salt, for sprinkling
2 cups (8 oz) Irish cheddar, grated
4 slices bacon, cooked and chopped
1/4 cup fresh parsley leaves
1/2 jalapeño, seeds removed (optional)
2 cloves garlic
1/2 tsp salt
2 Tbs red wine vinegar
2 Tbs olive oil
2 Tbs fresh chives, finely chopped
sour cream, for serving
Directions
  1. Slice the potatoes on a mandoline into very thin slices. Heat the vegetable oil to 350° F. Add the potato slices in batches, and fry until golden. Transfer to a baking sheet lined with paper towels. Sprinkle with salt immediately. Spread the potatoes on an oven-safe platter. Top with cheese and bacon. Place under a broiler for 2 to 3 minutes until cheese is melted. Add the parsley, jalapeño, garlic, 1/2 teaspoon of salt, vinegar and olive oil to a food processor. Pulse to chop. Lightly drizzle over the potatoes.
  2. Add the chives. Serve with sour cream.
